Natural sheep casings are the finest and most delicate of all natural casings, with diameters ranging from roughly 16mm to 28mm. Sheep casings are the second most used natural casing after hog casings. Each casing is carefully cleaned, sorted, and preserved in salt before use.
Sheep casings naturally coil inside the animal, giving them a gentle curve. Each piece can measure around 25 meters before processing. Standard widths include 18/20mm, 20/22mm, 22/24mm, and 24/26mm and 26/+.
In the UK and Ireland, the 22/24mm and 24mm+ casings are the most popular, particularly chipolatas and traditional butcher sausages. While sheep casings are more fragile than hog casings, this delicate nature ensures the cooked sausage has an almost imperceptible skin, giving a smooth eating experience.
When properly filled, sheep casings naturally curve, develop a nice “bloom,” and expand and contract with the meat as it cooks. For reference, a 24/26mm casing will typically hold about 1.5 lbs of sausage per 2 meters of casing.
Our sheep casings are available in bundles, either dry-salted or in brine, and are also offered on tape format for ease of use and speed. Each individual hank contains 80 meters of casing, with the taped casings being sold in multiples of two hanks (160 meters).
